Smashed Red and Yellow Potatoes

Ingredients

2 1/2 lbs red and/or yellow potatoes

olive oil

kosher salt

freshly ground black pepper

Optional toppings: low-fat plain yogurt, sour cream, chives, crumbled bacon, etc.

Directions

Bring a large pot of salted water to a boil. Add whole potatoes and boil for 20 to 25 minutes until they can be pierced easily with a fork or tip of a paring knife.

While potatoes are cooking, preheat oven to 425 degrees F.

Remove potatoes from water and let cool for about 5 minutes. Coat a sheet pan with olive oil. Place potatoes on pan. Using the back of a large spatula (or something similar), smash the potatoes to flatten them. Brush the top of each potato with olive oil, and sprinkle with salt and pepper.

Bake for 30 minutes until edges are crisp.

Serve hot. Dress with optional toppings, if desired.
