Scalloped Potatoes

Ingredients

2 lbs yellow, or red and yellow potatoes, cut into 1/8 “ slices

2 cups half and half

1 clove garlic, minced

1/4 teaspoon kosher salt

1/4 teaspoon freshly ground black pepper

pinch of cayenne pepper

2  Tbsp butter

4 oz cheddar cheese, grated

Directions

Preheat oven to 425 degrees F. 

Combine half and half, garlic, salt, black pepper and cayenne pepper in a small sauce pan. Heat over low, stirring occasionally. 

Spray a shallow 1 1/2  quart casserole dish with non-stick cooking spray. Lay potato slices in bottom of pan, filling pan and adding layers as necessary. Pour mixture from sauce pan over potatoes, filling to approximately 2/3 of the height of the potato layers. Dot the top with chunks of butter.

Bake for 30 minutes. Remove from oven and sprinkle grated cheese over top. Return to oven and bake for an additional 15 minutes, or until potatoes are tender and cheese is melted and browned. Serve hot.
